More info: Winemaker Kris Kato grew up in Portland, Oregon, where he developed “the beer bug.” But the fermentation science program at Oregon State University led him down the path of winemaking. He’s worked at Central Coast wineries large and small, and notes both experiences prepared him for his role at Carmel Road, where he focuses on Chardonnay and Pinot Noir.

Tasting Notes: Unfiltered and sweetest of all sakes. Its name translates to "cloudy" due to its appearance.
More Info: Nigori is the way sake first appeared when it was brewed for the Imperial Court in Kyoto as well as for most of its 2,000 year history. It is coarsely-filtered and the sweetest of all our types of sake. It is especially delicious with very spicy foods. The bottle should be shaken each time before pouring due to the high rice content that settles in the bottom of the bottle.

Jai Alai players attempt to catch a ball using a curved mitt whilst the ball travels at speeds up to 188mph! Proving they have a sense of humor the Spanish dubbed this game, with its ball traveling at racecar speeds, “the merry game.” Tampa was once home to a bustling Jai Alai fronton but sadly all that remains of Jai Alai in the Tampa Bay area is this India Pale Ale that we brew in tribute to the merry game.
