CHAPPELLET PINOT NOIR

Tasting Notes: This lush and expressive wine opens with aromas of black cherry, currant, anise, clove and toasty French oak. The cherry and currant notes are echoed on the mouth-filling palate, where silky tannins provide polish and length to the flavors while carrying the wine to a long finish with hints of tarragon, thyme, espresso and dark chocolate.
More Info: In 1967, legendary grower Warren Dutton planted his first vineyard, and helped to establish Russian River Valley as one of the world’s great appellations for Pinot Noir. Today, his sons, Steve and Joe, carry on Warren’s legacy and have established Dutton Ranch as one of the region’s preeminent vineyards. This wine is made using grapes from some of the most prized sections of Pinot Noir at Dutton Ranch. Nestled in the cool, foggy hills above the Russian River Valley, the result is a wine with remarkable depth and concentration.

More Info: While Chateau Lassegue has a long history in St. Emilion, with a chateau that was constructed in the mid to late 1600’s, the modern era for the property starts quite recently. This can be dated to when the vineyards were purchased by the famed, California vintner, Jess Jackson in 2003 from the Freylon family. After Jess Jackson passed away in 2011, his wife, Barbara Banke took over managing the estate full time, along with Pierre Seillan.

More Info: The winery’s name, Silverado, comes from the abandoned mining town at the top of the Napa Valley, where Stevenson stayed so many years ago. It is an appropriate symbol: three generations of the Miller family are still “prospecting” for wine, staying true to the idea of coaxing something precious from the soils we are privileged to care for.

Niege Apple: “Neige” (which means snow) is made from apples harvested in the fall and pressed at Christmas time. Their juice is then kept outside in the freezing winter cold, in order to naturally separate the sugar from the water through the process known as cryo-concentration. This is the way we then obtain our precious syrup, which we let slowly ferment over a period of 6 to 7 months. The color is a golden yellow with light reflections. On the nose it is pure and clean, the aroma of freshly-picked ripe apple with striking intensity. On the palate it's a crisp, flavorful attack. A perfect balance of sugar and acidity.
Inniskillin Vidal is a hybrid (Ugni Blanc and Seibel) that has a thick skin suitable for harvesting late in the season. It is the grape grown most for Icewine in Ontario. Good natural acidity gives great structure to the lusciousness of its tropical aromas and flavors of mango and lychee.
La Fleur D'Or Sauternes: Originally conceived in 1995 by Sauternes expert Bill Blatch with the négociant firm Vintex, La Fleur d’Or combines top notch parcels of wine from small lesser-known properties as well as some from classified châteaux. The vineyards of the numerous small estates are mostly in Barsac, where the misty morning microclimate encourages the growth of Botrytis cinerea. The average age of the vines is approximately 35 years, and the soils are predominately red ferruginous (iron-rich) clay with some gravel. The botrytized grapes are hand-harvested, and the wine is traditionally vinified in small steel vats. The wine is then aged for one year in barrels, followed by an additional year in stainless steel vats. The final blend is always lively and fresh, with the hallmark notes of botrytis

More info: 9% ABV; To date, La Fin du Monde has earned more medals and awards in major international competitions than any other Canadian beer. It is Unibroue's international flagship ale.

More info: 8% ABV; When La Maudite launched, its 8% alcohol content made it the first strong beer brewed in Canada. Its warm and spicy character, which was unique at the time, called for a blasphemous name.
