Tasting Notes: Unfiltered and sweetest of all sakes. Its name translates to "cloudy" due to its appearance.
More Info: Nigori is the way sake first appeared when it was brewed for the Imperial Court in Kyoto as well as for most of its 2,000 year history. It is coarsely-filtered and the sweetest of all our types of sake. It is especially delicious with very spicy foods. The bottle should be shaken each time before pouring due to the high rice content that settles in the bottom of the bottle.

Tasting Notes: On the nose, orange peel, jasmine, a hint of coastal air, soft cedar. Flavors of coffee bean, green apple, black tea and alpine herbs, with a finish of cinnamon rolls and mango.
More Info: Kaiyo Whisky is very intriguing indeed, starting out as a teaspooned malt (with the bulk of the malt whisky coming from one distillery, along with a drop of malt whisky from another distillery, meaning it can't be called a single malt). It's matured in mizunara oak - mizunara can impart a wonderful array of flavours to the whisky, though its notoriously difficult for coopers to work with. Not only that, it spends a portion of its maturation at sea, helping to evolve its flavour profile further.

TOKI

Tasting Notes: On the nose, soft orchard fruits and thyme honey are joined by a helping of peppermint in the backdrop. More green apple on the palate leads along bright citrus notes from pink grapefruit. Bitter herbs, toasted almonds and vanilla oak linger underneath. White pepper and ginger add spice to the finish.
More Info: Fun fact: 'Toki' means 'time' in Japanese. A blended whisky from Suntory's three distilleries: Yamazaki, Hakushu and Chita. Toki has a different composition to another Suntory blend, Hibiki, as its main components are Hakashu single malt and Chita grain whisky. It should work really well in a highball.
